Late grape variety, it is harvested manually at the end of the harvest to the maximum of its maturity.

Under-veil ageing of 6 years and 3 months minimum in oak barrels.

SERVICE & AGEING POTENTIAL

To serve around 16°C. To open 2h before.

Can be kept 20 years and more.

WINE & FOOD PAIRING

Braised veal chop with morels, game, tart tatin or walnut pie will do wonders.
