Parcels from «Château Gimont» and «Sous le Viaduc» located in the village of Montigny-lès-Arsures.
The vines are planted directly on the grey marls of Lias, very rare on the AOC Arbois.

 

VINIFICATION & AGEING

Manual harvesting and sorting

Under-veil ageing, in oak barrels for 4 years for the Savagnin. Chardonnay is aged 4 years in topped up large barrels. Blend 3 months before bottling.

 

SERVICE & AGEING POTENTIAL

12 to 14°C

Historical cuvée of the Domaine ROLET, will be kept10 years and more.

FOOD & WINE PAIRING

Will impress with some creamy meal or mushrooms as the moril but also with seafood.

Famous cuvée on affined cheeses, spicy or sweet and savoury dish.
